Going Gluten Free- The Chocolate Cake

This is our family's favorite chocolate cake.  It really reminds me of a brownie more than a cake.  When we first went gluten free I did a search for flourless chocolate cake and found a recipe that I have since tweaked to make it fit our taste.  I hope you all like it as much as we do.  

You will need:
4 ounces bittersweet chocolate
1/2 cup unsalted butter
1/2 cup maple syrup or honey
3 eggs
1/2 cup unsweetened cocoa powder
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp sea salt (optional)

Directions:
Preheat oven to 375 and butter an 8 inch round baking pan.  Coarsely chop chocolate.  Use a double broiler or metal pan over a saucepan of barely simmering water melt chocolate with butter.  Stir constantly until smooth.  Remove from heat and whisk syrup or honey into chocolate mixture.  Add eggs and whisk.  Slowly stir cocoa powder, vanilla, cinnamon, and sea salt into chocolate mixture, mix until combined. Pour batter into pan and bake in middle of oven for 25 minutes.   Let cool in pan on a rack before serving.  

This makes one 8 inch cake.
