Sweet Potato and Corn Chowder

With the Polar Vortex settling over the country again, I figured it was a good time to pull out some hearty soup recipes.  This is one of my family's favorites.



Ingredients
3 medium sweet potatoes peeled and diced
2 tbsp olive oil
4 cups corn
1 cup water
2 celery stalks
1/2 red onion
1/4 cup diced shallots
2 tbsp tomato paste
1/2 tsp thyme
3 cups veggie broth
1 bay leaf
1 baking potato
2 tbsp parsley
salt and pepper to taste

Heat oven to 350.  Toss sweet potatoes with 1 tbsp olive oil and salt and pepper.  Roast until tender, stirring once or twice.

Puree 3 cups of corn with 1 cup water.

Heat 1 tbsp oil in pan and saute celery, onion and shallots until tender.  Add tomato paste and thyme.  Add veggie broth, pureed corn and bay leaf.  Bring to a boil.  Add diced baking potato.

Cover and simmer until potato is tender.  Remove bay leaf.  Add remaining corn, sweet potatoes and parsley.  Cook until heated through.

So easy and so yummy.  It's even gluten free and dairy free =)
