Caramelized Onion Apple Pork Chops

This is another family favorite.  Probably because it involves pork, which is the next best thing to bacon.  Or so I've been told =)

Ingredients:
1 Tbsp butter
1 onion, chopped
1 clove garlic, minced
1 Granny Smith apple, chopped
1/2 tsp salt
1/8 tsp pepper
1/4 brown sugar
6 boneless pork chops
1/4 cup chicken broth
1/4 cup apple juice
1 Tbsp Dijon mustard

Directions:
Melt 1 Tbsp butter in skillet and add onion and garlic.  Cook and stir until tender over medium high heat.  Then reduce heat to low and cook, stirring frequently, until onions are golden brown- about 30 minutes.

Place pork chops in baking pan.  Top with onion mixture and apples.

Deglaze skillet with chicken broth and apple juice.  Stir in Dijon mustard.  Pour over pork chops.  Cover pan.  Bake at 350* until done (time will depend on thickness of chops).

Delicious served with garlic mashed potatoes and a side of vegetables.
